Ingredients

2 Veggies Made Great Superfood Veggie Cakes

1 Pita Pocket

1 Tomato, sliced

1 Head of Lettuce

1 Lemon

3/4 Cup Greek Yogurt

1/4 Cup Cucumber, diced

3 tbsp Red Onion, diced

Preparation

  1. Wash all produce under cold running water and pat dry.

  2. Combine diced red onion and diced cucumber with greek yogurt and a spritz of lemon juice. Set aside.

  3. Prepare Superfood Veggie Cakes according to directions. (Toaster oven recommended). Cut into halves.

  4. Stuff pita bread with lettuce, tomato, and Superfood Veggie Cakes. Top with sauce.

  5. Enjoy!
