Ingredients
2 Veggies Made Great Spinach Egg White Frittatas (or frittata of your choice)
Oil of your choice (to line the baking sheet)
Puff pastry (either store bought or homemade)
Heirloom tomato, thinly sliced
Seasoning of your choice, for garnish
Optional: additional egg to coat pastry
Preparation
Thaw 1 sheet of the puff pastry as directed on the package. Whether youβre using store-bought or homemade pastry dough, youβll need enough for 4 servings.
Preheat oven to 400Β°F and prep baking sheet by lining 4 spots with oil of your choice
Slice frozen Veggies Made Great frittata flavor of your choice in half
Layer tomato slices and half Veggies Made Great Frittatas onto each oiled spot.
Roll out the puff pastry using a rolling pin and cut into 4 squares. Each square should cover up the frittata & tomato stack.
Cover each stack with rolled-out puff pastry and press down the edges onto the baking sheet.
In a small bowl, whisk together an egg. Use a pastry brush to coat each pastry (alternatively, they can be coated with oil of your choice)
Bake for 20 minutes until golden brown.
Sprinkle with seasoning of your choice and enjoy!
