Ingredients
1 box of Veggies Made Great Homestyle Cornbread
1 tbsp olive oil
1 Tbsp minced garlic
1/2 cup chopped carrots
1/2 cup chopped celery
1/2 cup chopped white onion
1 to 1 1/2 cups of chicken or vegetable stock (depending on how moist you like it)
1 egg, beaten
1/3 cup dried cranberries
1/3 cup walnut pieces
1 Tbsp poultry seasoning
salt & pepper to taste
Preparation
Slice the Cornbread into cubes and air fry it for 6 - 8 mins at 400°F.
Heat olive oil on a pan/skillet and add in the minced garlic.
Add in the chopped onion, celery and carrot and sauté until onion has softened (~5 mins).
In a bowl, add your cornbread cubes, sautéed veggie mixture, chicken stock, beaten egg, and poultry seasoning.
gently toss it all together and transfer to a greased 8X8 baking dish.
Bake at 350°F for 25 mins.
